Welcome to the weekend, my friends! Happy happy happy Saturday! My kids were on Easter break this week and we had a lot of fun, but somehow it was also a fairly stressful week. Truck accident + lots of rain and kids who didn’t get to play outside as much as they (and their parents) would’ve liked + just life in general.

Anyways, vehicle repairs are underway and I’m thankful that summer vacation is now only a few weeks away! We don’t have a giant road trip planned for this summer, (that will happen next year - bring on the Pacific coast!) but we do have a lot of family and friends headed our way for visits over the next few months. I can hardly wait!

ON THE BLOG this week: The BEST Ramen Noodle Salad - My aunt Judy served this salad last time we visited and I could not stop eating it. (I think I had three servings!) I’ve had ramen noodle salads plenty of times in the past. But I’ll tell you now that those salads are nothing like this one.

I shared my tips for making Perfect Baked Potatoes along with a whole lot of recipes that can be stuffed inside, poured on top, or served alongside them. Oh! And recipes to use leftover baked potatoes too.

Last but not least, I finally shared these Sandia En Fuego margaritas. (a.k.a. Watermelon In Fire Margaritas) If you like spicy heat, this is about to become your new favorite cocktail. I hunted high and low for ripe watermelon, so that I could share these with you as soon as I was back home from the Caribbean. This was my favorite drink on the cruise ship. (If I consider the Dirty Banana a dessert - I can get away with having two favorites, right?)

What I’m CRAVING: This Death by Chocolate Devil’s Food Cake by my friend Joan at Chocolate Chocolate and More. I still miss her so much. And oh my goodness, check out this Frito Corn Salad!!! My friend Holly from Spend with Pennies shared that salad the other day and I can not wait to make it.

My FAVORITE THING this week is this Farmhouse Braided Throw Blanket (link HERE). I’ve used this throw blanket daily for the past month - I keep it on the rocking chair on the front porch. I just ordered three more for the back patio. It’s the perfect weight, just heavy enough for warmth without being bulky at all. I’ve washed it already and it washed beautifully.

I’m planning to put the others in a basket on the back porch when our patio furniture arrives. I’m pretty sure that these blankets are going to be in constant use outdoors through most of the year.

What I’m READING: Lost Lake by Sarah Addison Allen (link HERE) Like her other books, this was a quick read with just enough magic in it to make it a great reading escape. If you want a fun, light read that is sure to make you smile in the end, I recommend it.
