Welcome to the weekend, my friends! Any fun plans in the works? I’m looking forward to a lot of relaxing downtime and a fun day with friends on Monday. Anyone else making homemade ice cream? It really is the easiest and tastiest vanilla ice cream ever.

I’m leaning towards making my grandmother’s Six Three’s Ice Cream this weekend. Have you tried it? It’s an old fashioned favorite and it reminds me of her every time I make it.

ON THE BLOG this week: Cheesy Baked Mexican Pasta is a little bit Italian, a little bit Mexican and a whole lot delicious. Cheese, meat, veggies, and spices come together in an easy, enjoyable and fuss-free dinner.

Frito Corn Salad with Chicken and an irresistible Cholula Lime Dressing is going to be happening on repeat this summer. I adore fresh corn anytime I can get my hands on it and this salad makes the most of so many great ingredients.

What I’m CRAVING: This Baked Brie with Summer Fruit that my friend Sandi shared is everything I love in an immensely snackable recipe. And this Strawberry Basil Chicken Salad with Fried Goat Cheese by Iowa Girl Eats is calling my name as well.

My FAVORITE THINGS this week are my beloved pens. (link HERE) I’ve been using the Jetstream Uniball pens for years now - I’m sure I’ve mentioned them before. However, when I went to order them again this week, they were ridiculously on sale. (i.e. I used to pay around $3 a pen and buy them a dozen at a time once every year or so.) Today they were $6 plus $5 shipping and I may have squealed. No clue if that’s a weird sale thing or a fluke, but I highly recommend grabbing a box immediately if you’re a fan of a fabulously smooth writing pen. Every single person who uses mine comments on them. I still think they’re amazing, even after using them for so many years.

What I’m READING: The God Gene by F. Paul Wilson (link HERE) Panacea was great, so I dove right into the next book in the series. (I think it’s a trilogy.) I’m never certain how to describe his books, maybe Medical / Science Fiction with a hint of the supernatural? How’s that for vague? At any rate, I can never put them down.
