Welcome to the weekend, my friends! We’re in Ecuador today and I’m very much looking forward to the Chosen event on Monday. We met some wonderful families this week and I don’t say lightly that my life has been changed.

We will head home on Tuesday night. I’m ready to sleep hard and then dive into all the fall things. I still pinch myself when I look outside my home and see all the trees with their leaves turning color. I feel so fortunate to live in a place that I love so much.

ON THE BLOG this week: Vanilla Bean Whipped Sweet Potatoes are Sean’s favorite holiday dish. Without a spoonful of sugar added, this is the sweet potato dish of your dreams. Roasting the potatoes brings out so much sweet flavor, everyone loves them.

Colcannon Potatoes with Bacon is going to be on my Thanksgiving table this year. I love these potatoes so much. They’re a hit year-round, definitely not just for St. Patrick’s Day.

Have you tried a German Apple Pie? This is an apple pie like no other you’ve tasted. With little more than fresh apples, cream, sugar, and spices this pie is loaded with so much flavor you’ll hardly believe how easy it is to make.

Pumpkin Spice Baked Oatmeal is one of our favorite fall breakfasts; my boys would happily eat this every single morning all fall long if I let them. There is just something awesome about the way oatmeal changes when it is baked. Almost like a cake, but not nearly so sweet, this is a hearty breakfast that we all love. (This one gets bonus points for being such an easy breakfast, the kids make it on their own.)

What I’m CRAVING: I’ve been wanting to try my hand at making Homemade Gnocchi for a while now and I can’t wait to try this method! And this recipe for Sweet Potato Gnocchi needs to happen as well. I’m absurdly excited to finally try it.

My FAVORITE THINGS this week are these insect repellant wipes and lotion. (link HERE) I’d never heard of either item before this trip, but with traveling to an area that required a whole new level of insect repellant, they were recommended by the health dept. They both worked amazingly well. The wipes didn’t dry out my skin at all and the lotion actually felt great. I am so glad that I had both with me!

What I’m READING: My Dear Hamilton by Stephanie Dray (link HERE) was just not for me. Many have loved it, but I did not and I chose not to finish it. However, I just put Alexander Hamilton by Ron Chernow (link HERE) on my library holds list and I’m betting I’ll like it more.
