Welcome to the weekend, my friends! It’s been a nonstop week and I’ve loved it all. Two visits from friends, lots of laughter, great conversation, and tasty eats. The fact that I’ll be working a good bit this weekend is well worth the time off this past week.

ON THE BLOG this week: Spicy Mexican Stuffed Peppers are one of my husband’s favorite meals. I’m pretty sure he’ll take stuffed peppers any way he can get them.

Oven Baked Polenta is a delicious side dish for pretty much any meal. If you’re stuck in a rice, potatoes, and pasta rut, this baked polenta recipe is a great way to shake things up.

Twisted Chicken Piccata is crisp, juicy pan-fried chicken, topped with a tangy sauce. I’ve eaten chicken piccata at many restaurants. But it has never tasted like this. There is a surprise ingredient here that makes all the difference.

Ground Beef Stroganoff puts a new spin on the classic dish. Easy and fast enough for any weeknight, this Beef Stroganoff recipe with ground beef tastes every bit as good as the original–maybe even better.

What I’m CRAVING: My friend Lynne’s Chicken Enchilada Bites caught my eye this week and I can’t wait to try them. I love hand held snack foods that are hearty enough to be a meal and the flavor combinations here are endless. What a fun idea!

My FAVORITE THING this week (and pretty much every week of my life) is my Kindle Paperwhite. (link HERE) I’ve had mine for just over 5 years now and I have read hundreds of books on it. The backlit paperwhite was a game changer in the ebook world for me. I’ve fallen asleep reading in the dark for the past few years.

After 5 years, mine has finally started to lose its ability to hold that amazing endless charge. (I used to be able to go at least a week or two - or read several books - between charges.) Now, I’m charging it every 2-3 days. So, I just bought a new paperwhite without hesitation. I love it so much! Sure would be nice if a cell phone lasted this way, wouldn’t it?

What I’m READING: The War I Finally Won by Kimberly Brubaker Bradley (link HERE) This is a worthy sequel to The War That Saved My Life (link HERE) I ordered hard copies of both books the same day I finished the first one. I let my youngest read the sequel before me and he devoured it in just a few days.

He had such a hard time not giving me any spoilers, but it was also really neat to see his excitement over the book and his sadness too. (I think this was the first time he’s ever read a book before me.) It’s a very real picture of life during war times and we talked more about it all after I finished the book. I highly recommend both books.
