Welcome to the weekend, my friends! Can you believe this is the 200th newsletter I’ve sent you? What began on a whim almost 4 years ago has become one of my favorite things I do each week. I love hearing from you and I really enjoy being able to share more of our life through these emails. (Read to the end for a fun giveaway this weekend too!)

I wrote a blog post on gratefulness this week. There are a whole lot of things for which I am grateful right now. I would love it so much if you would leave a comment there with something you are grateful for right now.

ON THE BLOG this week: Cabbage Roll Casserole has all the flavor of the more labor-intensive classic Cabbage Rolls and with a minimum of effort, this is a dinner time win.

My family’s beloved Green Chile Stew is loaded with bite-size chunks of pork that are seasoned with onion and plenty of garlic. Filled with that irresistible pork, potatoes, and roasted green chile, this stew is what I dream of when I’m missing New Mexico.

So many of you made classic Homemade Ice Cream this week! So, I shared this crazy amazing Chocolate Peanut Butter Ice Cream for a real weekend treat. Rich chocolate and peanut butter ice cream with chocolate pieces throughout, this is one of the most decadent ice creams I have ever made.

What I’m CRAVING: Pizza! If you haven’t yet made Rebecca’s Best Ever Pan Pizza, you’re definitely missing out. I just put it on our meal plan for next week.

My FAVORITE THING this week is my new electric griddle! (link HERE) If you hang out with me on Instagram, you know just how frustrated I have been with our 10+ year old pancake griddle. I loved it so much, but it finally just died. (They don’t make it anymore, so there was no way to replace it!)

I tried a few different griddles and they all left weird lines or unevenly cooked spots in the pancakes. This electric griddle? It’s fantastic! Perfectly cooked, golden brown pancakes, every single time! I love it so much, I’m giving one away this weekend. Head over to Instagram and leave a comment on the pancake post to be entered!

What I’m READING: Tending Roses by Lisa Wingate (link HERE) If ever there was a book perfect for right now... I’m usually several weeks ahead in the “what I’m reading” list for my newsletter. So technically, I read this book a while back and am just now sharing it here.

This book made me cry and smile and remember many of the reasons why we live the life we live. If you’re looking for a book that will remind you to prioritize the daily over the dreams for the future, this is the book. Thanks so much for the recommendation, Kristen!
