Welcome to the weekend, my friends! How is everyone doing? This has been the first week in a while where my brain hasn’t felt like it was in a fog and I’m super grateful for that. The unknowns of everything right now have caused so many distractions in our lives, just focusing on a book or movie, let alone work, has been difficult. I really have enjoyed hearing from you, it’s been good to know that we’re all in this crazy situation together though far apart.

Our weather has turned chilly again and I’m realizing exactly why everyone (those who live with different seasons, that is) looks forward so much to the changing of the seasons. I’m very much looking forward to more spring flowers and warmer weather soon!

ON THE BLOG this week: Oven Roasted Broccoli is a deliciously simple side dish that may just steal the dinner spotlight.

Do you know how easy it is to make a buttermilk substitute? You may have already made your own “buttermilk” without even realizing it.

Mexican Lasagna has become a family favorite over the past few years. Spicy beef is layered with rice, beans, and tomatoes, then layered with enchilada sauce to make this hearty Mexican casserole.

This Queso Blanco Dip is a creamy, spicy, perfectly smooth and cheesy dip just like they serve at your favorite Mexican restaurant. With just a few minutes in the microwave, you can take chips and salsa snacking to a whole new level.

What I’m CRAVING: This Beef and Broccoli Ramen Stir Fry caught my eye this week. Doesn’t it look awesome? You can bet that I’ll be adding ramen noodles to my beef and broccoli asap.

My FAVORITE THING this week is this bar cart. (link HERE) I have it under the window in my office with the coffeemaker on it. It was a terrific deal at that price and I’m thrilled with the way it looks. It’s much better quality than I even expected.

What I’m WATCHING: Spies in Disguise (link HERE) Super spy Lance (Will Smith) and his sidekick scientist Walter (Tom Holland) are on a mission to save the world when Lance is accidentally transformed into a pigeon. This doesn't make it sound nearly as fun as the movie actually was, but the kids and I really enjoyed watching this one together. We laughed a LOT.

What I’m READING: Miles to Go: The Second Journal of The Walk Series by Richard Paul Evans (link HERE) I read The Walk (link HERE) a few weeks ago and when this one was finally available from the library I read it that same day. These books are a positive, fairly light read (after you get past the tragedy of the initial book, that is) and I’m really enjoying them. There are five books in the series and I have the others on hold now.

“It isn't what you have or who you are or where you are or what you are doing that makes you happy or unhappy. It is what you think about it.” - Dale Carnegie (note to self - keep looking for the positives every single day!)

Wishing you a beautiful week full of little things that make you smile!
