Welcome to the weekend, my friends! Today we begin our crazy long road trip. (I’m so excited!) The house sitters have settled in at our house in Phoenix and we’re taking our little home-away-from-home across the country. This week, we’ll be spending a few nights in Santa Rosa, NM, Oklahoma City, OK, and Nashville, TN.

On the blog this week, Slow Cooker Steak Fajitas are a super tasty way to get dinner on the table with the bare minimum of effort. And speaking of minimal effort with the biggest pay off, I shared the easiest and BEST homemade ice cream on the blog this week. (I know, those are strong words for someone with 60+ ice cream recipes on her website!)

This Homemade Vanilla Ice Cream is reason enough to buy an ice cream maker, if you don’t already have one tucked away in your kitchen. Homemade Ice Cream really is the quintessential summer treat, isn’t it?

What I’m CRAVING: Chipotle Lime Shrimp Bowls by Foodie Crush, Southwest Pasta Salad by Two Peas and Their Pod, Fried Egg in Purgatory by Wonky Wonderful, and Chocolate Chip Banana Bread Muffins by Sweet Phi

My FAVORITE THING this week is my beloved ice cream compressor (link HERE). I’m not even going to deny that it’s a pure kitchen appliance indulgence, but the ice cream it makes is about as dreamy as homemade ice cream can get. That said, I also have this ice cream maker (link HERE) and it makes some pretty amazing ice cream as well at a fraction of the price.

What I’m READING: The Soprano Sorceress by L.E. Modesitt, Jr. (link HERE). I read this series almost 20 years ago and absolutely loved it! I just downloaded the first book to my Kindle yesterday, so that I would have a guaranteed fun read for the road this week. I’ll keep you posted on whether I still love it as much as I did years ago.
