Welcome to the weekend, my friends! We left my hometown of Albuquerque, NM yesterday morning and drove the final stretch of our road trip home to Phoenix, AZ. It’s hard to believe it’s already been five weeks. This trip was everything we hoped it would be and so much more.

On the blog this week: Creamy chunks of avocado are combined with a tender pieces of chicken in a fresh and slightly spicy dressing to make this Avocado Chicken Salad. My family hasn’t always loved avocados, but they went crazy over this chicken salad recipe.

Roasted sweet potatoes, crisp warm baby spinach and spicy breakfast sausage are all topped with a soft egg in this breakfast hash. If you haven’t yet eaten a breakfast hash, don’t knock it until you try it!

What I’m CRAVING: Fried Cabbage and Bacon Coleslaw by The View from Great Island is going to be happening in my kitchen just as soon as we get back home. This Apple Custard Pie with Cinnamon Streusel by The Food Charlatan caught my eye this week and it is now at the top of my fall baking list.

My FAVORITE THING this week is the Rubberneckers travel game (link HERE). I was a bit of a skeptic when I bought this game, but the reviews were right and we really enjoyed it. It’s quite simple in that you simply draw cards and then look out the windows for the items on the cards, i.e. construction vehicles, flashing lights, toll booths, a school bus, a college window decal. However, it wound up being a lot of fun for all of us. You simply hang on to the cards for the things you see first and add up a point per card at the end of your game time.

What I’m READING: The Great Alone (link HERE) by Kristin Hannah. I promised you an update when I’d finished it and here it is. Read this one. Put it on your list now. Thank you now to every person who recommended it to me. I liked this book so much. It is dark at times and not a book full of sunshine, but it is full of strong characters and survivors. I hardly put it down until it was finished.
