Welcome to the weekend, my friends! I am so happy to be writing this note to you from my own couch at home. Did I mention what a whirlwind of travel this month has been and is going to be?


I’m leaving for NM tonight and I’m very much looking forward to a week of visiting my favorite places and enjoying all the fantastic foods that Albuquerque and Santa Fe have to offer. This native New Mexican is pretty excited about the week to come.

On the blog this week: I shared the 30 Minute Enchiladas that I make on repeat throughout the year. Once you’ve tried this EASY method of layering everything casserole style, you’ll be making them every chance you get.


I also shared a new video for my Orange Parsley Salad with White Balsamic Vinaigrette. Let me tell you, this is still one of my very favorite salads. My friend Rebecca and I shot the video together while she was here and it was so much fun to have her in the kitchen with me.

What I’m CRAVING: ALL THE NEW MEXICAN FOODS! I can hardly wait to eat my fill of sopapillas, tamales, enchiladas, burritos, tacos, margaritas, fried ice cream, green chile, red chile, and so much more.


My FAVORITE THINGS this week are my sleep mask and these ear plugs (link HERE). Those ear plugs have been my saving grace through some very rough nights of travel and a really great sleep mask is priceless for times when the place you’re staying winds up being ridiculously bright first thing in the morning.


What I’m READING: Tell the Wolves I’m Home by Carol Rifka Brunt (link HERE). I just loaded this one to my Kindle for the flight tonight. A few of you recommended it and I’m excited to finally read it. Thanks so much for all the book recommendations last week. Keep sending them to me if you haven’t already!
