Welcome to the weekend, my friends! I hope that your holidays were everything you wished them to be. We had fun sending out all the gifts to the Christmas giveaway prize winners. (The winners’ names have all been added to this blog post.)

This has been a very laid back week for us. Lots of reading, watching movies, and enjoying the multitude of new LEGO sets that have made their way into our home. (That’s life with an 8 year old, right?)

ON THE BLOG this week: These Coconut Scone Cookies are my gift to all coconut lover’s out there. Is it a scone? Is it a cookie? Coconut Scone Cookies are the best of both worlds.

Are you looking for some easy and delicious dinner ideas? I rounded up all of my favorite enchilada recipes for you this week. Chicken, beef, pork, and vegetarian enchilada options are all ready and waiting for you!

Last but not least, I’ve got you covered for New Year’s with these tips for making a very simple cheeseboard. Hopefully this will make it easy-peazy for you to pull together a simple cheese board with little more than what you might find in your refrigerator or freezer.

What I’m CRAVING: Crescent wrapped little smokies! Have you tried these? I haven’t made them in years and years, but I remembered them when I was at the store yesterday and picked up a couple packages of the sausages. I’m going to make them for New Years Eve.

My FAVORITE THINGS this week are my Uni-ball Jetstream pens (link HERE). I’m an admitted pen snob and these pens have been my favorites for several years now. I just ordered a new supply this week and as always, I can’t believe that a pen of this quality is possible for just a few dollars. I’ve spent far more on other pens in the past and they simply can’t compete with these.

What I’m WATCHING: Alias (link HERE). I introduced my oldest son to the show over Christmas break and we’ve had a blast watching an episode or two each night. I love this show and it’s so much fun to watch the whole series again from the beginning.

What I’m READING: Crazy Rich Asians by Kevin Kwan (link HERE) I’ve seen a whole lot of movie talk and book talk about this one for the past few months. However, I had a really hard time getting into it. The designer name dropping was off the charts and much of it just felt bizarre and so foreign to me. (Maybe that was the whole idea? Maybe there really is an entire subculture of people who live and think this way?)

The book was a pretty quick read though. After dragging through endless money / designer / lifestyle descriptions for the first ½ of the book, the actually ending flew by and felt rushed. I honestly can’t say I’d recommend this one, but I wouldn’t mind chatting more about it if you read it and loved it. Truthfully, I speed-scanned a great deal of it to get past the wealth related conversations, so maybe I missed something amazing in there. (And oh my word, could I have written a lengthier review? Sheesh.)

“The new year stands before us, like a chapter in a book, waiting to be written. We can help write that story by setting goals.” - Melody Beattie

Wishing you a beautiful week full of little things that make you smile!
