Welcome to the weekend, my friends! There are only 44 more days until our Ohio adventure begins and I can hardly wait. If you’d told me a year ago that we’d be moving to Columbus, Ohio, I wouldn’t have believed you. However, when you fall head over heels in love with that part of the country, while driving through on a road trip, you do everything possible to make that brand new dream happen. I’ll be sharing more as the days grow closer, but for now? I’m just happily counting down.

ON THE BLOG this week: I shared this Perfectly Fluffy Chocolate Frosting to go with Grandma’s Crazy Cake. Also, if you are a fan of Cauliflower, you’re going to love this Cauliflower Fried Rice. It’s loaded with spicy Mexican flavors and my whole family enjoys it.

Last but not least, some of the most popular recipes on the site are for Baked Chicken Thighs, so this week I gathered up all of our favorites in one place along some tips for baking perfect Chicken Thighs every time. There are so many ways to make them, you’ll never get bored with dinner.

What I’m CRAVING: I have been craving Asian flavors like mad lately, so these Stir Fry Noodles will be happening again soon. These Potstickers by Life’s Ambrosia and this Asian Cucumber Salad by The Food Charlatan also sound pretty amazing.

My FAVORITE THING this week is my new coffee mug (link HERE). Sean gave this to me for Christmas and I laughed so incredibly hard when I opened the box. This is absolutely something that I would’ve bought for myself and Sean would’ve laughed at it. So, the fact he bought it for me? Perfection.

What I’m WATCHING: Schitt’s Creek (link HERE) oh my gosh, so many of you recommended this one and I’ll recommend it with a warning. This is rated M on Netflix and it’s definitely not safe for kids. That said, it’s one of the funniest shows I’ve seen in ages and I am hooked.

What I’m READING: The Tattooist of Auschwitz by Heather Morris (link HERE) I read this book in one sitting and I loved it. It’s simultaneously heartbreaking and heartwarming. The fact that it’s a true story makes it even more amazing to read.
